From the maker
Overview Tu Nguyen’s 210mm kiritsuke gyuto pairs a 52100 carbon steel core with rainbow Damascus cladding. Bands of copper and gold color run across the blade face above the exposed cutting edge. The octagonal ebony handle meets the blade at a pale horn ferrule. Each knife has its own pattern and wood grain. The edge has a long, relatively flat section for push cuts through vegetables. Its angled spine descends to a fine point for scoring or making close cuts around shallots. At 210mm, the blade also has enough length to slice a boneless roast in a single draw. Common Questions What does kiritsuke mean on this gyuto? It describes the angular tip. You can use the belly and heel for everyday board work, then use the point for finer cuts. How do I care for the steel? The exposed 52100 edge can take on a patina. Wipe it between ingredients, hand-wash after prep, and dry it immediately. For extended storage, apply a thin coat of tsubaki oil. Specifications
