From the maker
Overview
A compact utility blade for precise everyday prep, this Takeshi Saji petty pairs a 130mm profile with SPG STRIX stainless powder steel. The polished tsuchime finish gives the blade its distinctive hammered texture, while the fine tip suits trimming fruit, working around small vegetables and making controlled detail cuts.
Made in Echizen, Japan, by Takeshi Saji, a recognized Traditional Master Craftsman, this blade brings his hand-forged knife making to a small kitchen workhorse. Its stainless construction is practical for frequent use, and the double-bevel edge suits both right- and left-handed cooks.
This listing is for the blade only. The exposed tang requires a properly fitted wa handle before use. A handle is sold separately.
Choose a Small Wa Handle
Complete your petty with a Small Tokushu Shattered Carbon Wa Handle, Small Tokushu Shattered Carbon Gold Wa Handle, or Small Tokushu Cypress & Horn Wa Handle. These are separately priced add-ons. Final compatibility depends on the tang and handle opening; contact us to confirm fitting. Free installation is available with an eligible blade and handle purchased together.
Common Questions
What is a 130mm petty knife good for? Once fitted with a handle, it is useful for trimming, peeling and slicing small ingredients, especially when a full-size chef's knife feels cumbersome. It complements a larger gyuto for detailed preparation.
Is SPG STRIX stainless? Yes. SPG STRIX is a stainless powder steel developed by Takefu Special Steel. This Saji model is listed at approximately 64–65 HRC, offering a hard cutting edge for precise work. Stainless steel still benefits from prompt washing and drying.
How should I care for it? Hand wash and dry immediately after use. Work on a knife-friendly board and avoid bones, frozen food and twisting the edge in a cut. Maintain the edge with suitable whetstones; do not put the knife in a dishwasher.
