Overview
The Takeshi Saji VG-10 Cross Tsuchime Gyuto 180mm pairs a compact Japanese chef’s blade with a pink acrylic western handle. Cross-pattern hammer marks and flowing Damascus layers give the polished blade its character, while the curved cutting edge and pointed tip cover everyday slicing, chopping and detail work.
Made in Echizen, Japan, this Saji gyuto offers the corrosion resistance of a VG-10 stainless-steel core in a size that is easy to maneuver on a smaller cutting board. The fitted handle has a contoured profile, metal bolster and swirling pink pattern. The photographs show the knife available.
Common Questions
Is a 180mm gyuto suitable for a home kitchen? Yes. It is a practical choice for cooks who prefer a compact chef’s knife for vegetables, herbs, boneless meat and fish. A longer gyuto provides more cutting length for large ingredients, but this 180mm blade is easy to control for daily preparation.
Is this Saji knife stainless? The VG-10 core and stainless Damascus cladding resist corrosion. Hand-wash after use and dry thoroughly; stainless steel still needs care. Do not soak the knife or put it in a dishwasher.
How should I maintain the edge? Use a wood or soft synthetic cutting board, such as a Hasegawa cutting board. Avoid bones, frozen food, twisting and prying. Sharpen with suitable whetstones as needed, or use our knife sharpening service.
