From the maker
Overview
The Yu Kurosaki Senko Ei SG2 Petty 130mm is a compact utility knife built for precision tasks on and off the board—think trimming silverskin, segmenting citrus, hulling strawberries, or quick veg prep. “Senko” means “flash,” and the blade’s star-like hammered tsuchime scatters light while helping food release. The Ei profile adds a slightly more pointed tip for extra accuracy without sacrificing control.
At its core is powdered metallurgy SG2 (R2) stainless, heat-treated to about 62–63 HRC for excellent edge retention and crisp bite. Stainless cladding keeps day-to-day care simple: wash, dry, and stow. A thin 50/50 grind, light weight, and octagonal wa handle make it an easy, agile daily driver for home cooks and pros alike.
Common Questions
Q: What’s the advantage of the “Ei” version?
A: The Ei geometry is a touch more pointed at the tip, giving finer control for detail cuts (scoring, trimming herbs, citrus supremes) while keeping a familiar petty feel for general prep.
Q: Is SG2 stainless hard to maintain?
A: Not at all. It’s stainless core and cladding—just hand-wash, dry well, and use a wood or quality plastic board. Avoid bones, pits, or frozen foods to protect the fine edge.
Q: How does a 130mm petty fit into a kit?
A: It bridges paring and chef’s knives: small enough for in-hand work, long enough for quick board tasks. Many cooks keep it on the line for speedy, precise jobs.
