This small-batch chocolate bar by Guadalajara-based Metiche is crafted entirely from scratch using Mexican-grown cacao from Soconusco, Chiapas. Each step—from roasting to molding—is done by hand, preserving the full complexity of the cacao’s natural flavor. In this bar, the cacao nibs are aged for a full month in Espadín mezcal from Oaxaca, resulting in an incredibly smooth, aromatic bar with subtle smoky and fruity notes.

Mexican cacao has deep cultural roots and is considered one of the finest in the world. Pairing it with Espadín mezcal, a traditional agave spirit, honors two ancestral ingredients in one refined bite. The result is a complex and layered chocolate bar that feels earthy and grounded, with just a hint of mezcal in the background.
