Masakage Shimo 240mm Gyuto - Handcrafted Japanese Knife
Discover the artistry and excellence of Masakage knives, a collaboration of some of Japan’s finest blacksmiths, united under one prestigious name. Founded in Echizen by the renowned knife sharpener Takayuki Shibata, Masakage has grown into a collective showcasing various unique lines, each one embodying the skill and style of its maker. Every Masakage knife promises the unparalleled quality that Echizen craftsmanship is known for.
The Shimo line, which translates to “frost,” features a core of Shirogami 2 (White #2) steel, delivering a strikingly cool aesthetic. The blade is clad with carbon steel, boasting a unique low-contrast Damascus pattern, echoing the frost-inspired design. The carbon steel cladding does mean this blade is highly reactive, so a bit of extra care is essential to maintain its beauty and performance.
The 240mm gyuto – often revered by chefs and home cooks alike – is the go-to size for those who prefer a larger, more versatile blade. With an extra 30mm compared to the standard 210mm gyuto, it provides excellent control for bigger hands, larger tasks, and more extensive cuts. And for those skeptical of its versatility, this 240mm gyuto will prove its skill, even in tasks as delicate as slicing garlic.
