From the maker
Kyohei Shindo Nakiri 165mm
Born in Hokkaido, Kyohei Shindo dreamed of becoming a blacksmith from a young age. He achieved that ambition by opening his own workshop in Tosa, Kochi Prefecture, at just 32 years old.
Shindo-san’s knives are distinguished by their pronounced distal taper, exceptionally thin cutting edges, and traditional Tosa-style lacquered kurouchi finish. They offer remarkable cutting performance and craftsmanship at an accessible price.
The nakiri is one of Shindo-san’s most sought-after designs. Its tall blade provides excellent knuckle clearance, while a subtle hammered S-grind helps release food from the blade. The exceptionally thin, delicate edge passes effortlessly through vegetables but requires careful technique. With proper use and maintenance, this knife will provide outstanding performance for years.
The standard keyaki handle is practical and lightweight. For a more distinctive appearance and refined feel, upgrade to one of our Tokushu house handles. When purchased with this knife, we will install the new handle before shipping.
