Overview
The Teruyasu Fujiwara Denka Aogami Super Gyuto 195mm (Wa) is a compact, high-octane performer from Tokyo’s master blacksmith, Teruyasu Fujiwara. Denka is his flagship line: an in-house forged Aogami Super core hardened to about 65–66 HRC, clad in stainless for easier day-to-day care. Expect outrageous bite, long edge life, and that signature rustic kurouchi + subtle tsuchime aesthetic that looks as serious as it cuts.
At 195mm, it lands between a 165mm santoku and a 210mm gyuto—fast, nimble, and extremely versatile for tight boards or pro prep lines. The octagonal wa handle provides confident control for tip work, push cuts, and long draw slices. For care, wash and dry promptly; protect the carbon edge with a light coat of tsubaki (camellia) oil, and use a knife-friendly board like the Hasegawa Pro. Want a pro edge from day one? Add our Knife Sharpening Service at checkout, then keep it screaming with a few light passes on our XL Buffalo Leather Strop.
Common Questions
Q: Is the Denka 195mm good for home cooks as well as pros?
A: Yes. The 195mm length feels compact but covers 90% of daily tasks—onions, herbs, proteins—while staying maneuverable on smaller boards. It’s a great “only knife” size if you want speed and control.
Q: Is Aogami Super stainless?
A: The core is carbon (not stainless) and will patina; the cladding is stainless to reduce maintenance. Wash, dry, and apply a thin film of tsubaki oil if storing or working long service.
Q: What makes Denka different from other AS knives?
A: Fujiwara’s in-house heat treatment pushes hardness to ~65–66 HRC with outstanding edge stability, giving you elite sharpness and edge retention with a thin, high-performance grind.
Q: I’ve heard the fit and finish is rustic—should I worry?
A: It’s intentional and part of the charm. Many enthusiasts polish the spine/choil themselves for custom comfort—an easy skill upgrade that pairs perfectly with Denka’s performance.
