Overview
The Manaka Aogami #1 KokuEnn Sakimaru Sujihiki 300mm with Prisma Knife Handle is a double-bevel Japanese slicing knife forged by fifth-generation blacksmith Kisuke Manaka at Manaka Hamono in Kasukabe, Saitama. Its Aogami #1 (Blue Paper #1) high-carbon steel core is clad in multi-layered carbon-steel Suminagashi Damascus and finished with a deep black kurouchi. The fully reactive blade will develop a patina with use.
The long, narrow sujihiki profile supports clean, single-stroke cuts through roasts, brisket, prime rib, and fish. Its Sakimaru K-tip adds control for trimming and detail work. Hardened to approximately 63 HRC, the Aogami #1 core offers excellent edge retention, while the substantial spine and approximately 300-315g finished weight give the 300mm blade a stable, confident feel.
A one-of-a-kind Prisma Knife handle completes the smoke-and-ember design. Carbon fiber and gold fleck are suspended in clear epoxy and paired with a luminous pearl ferrule. The gold details resemble embers within the grey and black Suminagashi pattern, tying the blade and handle together as a cohesive custom piece.
Best Uses
Clean, single-stroke slices through roasts, brisket, prime rib, and other large proteins
Portioning raw or lightly cured fish for sashimi, sushi, and crudo
Carving poultry and large-format proteins
Slicing terrines, roulades, and other delicate preparations
Precision trimming and detail cuts with the Sakimaru K-tip
Care & Sharpening
Hand-wash with mild soap, rinse, and dry immediately. Never soak the knife or place it in a dishwasher.
Wipe the blade frequently during prep, especially when cutting acidic foods.
Apply a light coat of food-safe blade oil before extended storage to help prevent rust.
Avoid frozen foods, bones, twisting cuts, and hard cutting surfaces.
Use a soft, knife-friendly cutting board to protect the fine edge.
Maintain the edge with a leather strop and sharpen on quality waterstones when needed.
Wipe the custom Prisma handle with a soft cloth and keep it away from harsh chemicals and high heat.
