Overview
The Hatsukokoro Kumokage Blue #2 Kurouchi Damascus 255mm Kiritsuke Sujihiki is a powerful, elegant Japanese slicer made for clean, uninterrupted cuts through roasts, fish, and other proteins. Its long, low K-tip profile pairs a keen Aogami #2 carbon-steel edge with reactive soft-iron Damascus cladding and a rustic kurouchi finish.
Fitted with an octagonal mono ebony wa handle, this example has a refined, understated feel that complements the dark “cloud shadow” character of the Kumokage line.

The 255mm blade gives you the length to portion proteins in smooth pull cuts with minimal sawing. Blue #2 takes a very keen edge, retains it well, and remains pleasantly responsive on sharpening stones. The pointed K-tip adds precision for trimming and detail work.
Care
This knife is fully reactive and will develop a natural patina. Hand wash only, wipe dry immediately after use, and apply a light coat of food-safe knife oil before extended storage. Avoid bones, frozen food, twisting, and hard cutting surfaces.
Because each knife is handmade, dimensions, finish, and Damascus pattern may vary slightly.
