Fujiwara Wa Denka Nakiri 165mm
Description
About the Shape: The Nakiri, a staple in Japanese cuisine, is an exquisite vegetable knife. This design, often overlooked in Western kitchens, features a flat blade perfect for a push/pull vegetable chopping technique. The advantage? Every part of the blade edge makes contact with your chopping board, ensuring your vegetables don't turn into an 'accordion' style cut, where parts are still joined. For a real experience of the Nakiri's potential, try preparing vegetables asap - the effortless chopping will astonish you.
About Teruyasu Fujiwara: Teryuasu Fujiwara is a distinguished blacksmith from a family with a 130-year lineage. The uniqueness of his craftsmanship lies in the focus on kitchen knives - a departure from his predecessors. Fujiwara's understanding of the need for a razor-sharp blade and easy maintenance led him and his father to create an innovative process in the '70s. They invented a method to forge-weld stainless steel over carbon steel, a practice that has become widespread in Japan today. Fujiwara's method involves starting with a quantity of steel three times more than other blacksmiths. Despite the longer forging time, the result is a knife with performance superior to others of the same steel, achieved through his distinctive forging technique.
