From the maker
Overview
Hand-forged in Hirosaki, Aomori, the 210 mm Nigara Hamono Kiritsuke blends carbon-like sharpness with stainless convenience. Its SG2 powder-steel core is clad in rugged kurouchi tsuchime stainless for a striking look that shrugs off rust. The flat profile and aggressive k-tip excel at push cuts, vegetable prep, and precise protein work. A full-tang Western handle, dressed in iridescent abalone-resin scales and finished with a nickel-silver bolster, delivers confident balance and show-stopping style at the cutting board.
Common Questions
Q: What’s the real cutting edge length? A: Nigara measures from the neck (machi); the sharpened edge is about 198 mm, giving ample runway without feeling oversized.
Q: How often will I need to sharpen SG2? A: At 62–63 HRC, SG2 holds a keen edge for months of typical home use. A quick strop keeps it screaming sharp; full stone work is needed only a few times per year.
Q: Is the abalone-resin handle durable? A: Yes. The shell is pressure-stabilized in waterproof resin, making it as tough as Micarta. Hand-wash, dry promptly, and the shimmer lasts for decades.
