From the maker
This Tetsujin Hamono Kiritsuke Gyuto is a blade-only knife in the nominal 210mm size, with an approximately 200mm cutting edge. Its Ginsan (Silver #3) core and stainless cladding provide a fully stainless construction, while the Kasumi finish gives the blade a restrained, traditional appearance.
Toru Tamura forges the blade, and Naohito Myojin grinds and sharpens it. The double-bevel, 50/50 geometry is intended for general kitchen prep. No handle is included, so the blade must be fitted with a compatible handle before use.
