Overview

The Takeshi Saji VG-10W Nashiji Rainbow Gyuto 180mm is a compact, hand-forged Japanese chef’s knife from Echizen, Fukui. Its VG-10W stainless core is wrapped in Saji’s multi-metal Rainbow Damascus cladding, where layers of stainless steel, brass, and copper create a vivid, one-of-a-kind pattern beneath a textured nashiji finish.

This rosewood-and-red handle variant is fitted with an octagonal rosewood wa handle and a contrasting red wood ferrule. The faceted handle provides a secure, comfortable grip while keeping the knife light, balanced, and highly responsive.

Performance

The 180mm gyuto profile delivers chef-knife versatility in a shorter, more agile format. It is ideal for cooks who prefer precise control, work on smaller cutting boards, or want a nimble all-purpose knife for vegetables, herbs, and boneless proteins. The stainless VG-10W core offers strong edge retention with easier maintenance than reactive carbon steel, while the double-bevel edge is suitable for both right- and left-handed use.

Every Rainbow Damascus blade has its own arrangement of copper, brass, and steel. Pattern and color variation are part of the handmade character of this exact knife.

Care

Hand wash with a soft sponge and mild soap, then dry immediately. Do not use a dishwasher, cut frozen food or bone, or twist the edge through hard ingredients. Use a knife-friendly cutting board. The copper and brass layers may naturally develop patina over time; this is normal and adds character to the finish.
