From the maker
The HATSUKOKORO Shirasagi Aogami #2 Gyuto is a right-handed, single-bevel knife in the nominal 240mm size. Its Aogami #2 carbon-steel core is clad in softer iron and finished with Kurouchi and Tsuchime textures.
Specialist documentation for this Shirasagi Blue #2 line identifies Hatsukokoro as the commissioner, Toru Tamura as the blacksmith, and Tateo Myojin as the sharpener. Shirasagi is a separate project from Tetsujin Hamono, where Naohito Myojin performs the sharpening and finishing.

Care
Aogami #2 and the soft-iron cladding are reactive. Hand-wash and dry the knife immediately after use, expect a patina to develop, and avoid bones, frozen food, twisting, or prying. Use wood, quality soft plastic, or rubberized cutting boards. Single-bevel geometry also requires the correct handedness and a different sharpening approach from a double-bevel gyuto.
