While other English cookbooks had been reprinted in America prior to this work (e.g., William Park’s abridgement of Eliza Smith’s The Compleat Housewife, and Susannah Carter’s 1772 American edition of The Frugal Housewife), this 48-page duodecimo, American Cookery, (1796) by Amelia Simmons is believed to be the first cookbook written by an American – giving it a unique perspective. While Simmons admits in her preface to her “circumscribed” knowledge and thus entreats the expertise of other American women in hopes of improving future editions, her work, nonetheless, offers valuable insight into the foods and cuisine of early America (and just how far our modern versions have strayed from them). This skillfully crafted facsimile will be a great addition to your historical reenactment props and repertoire.
